Here are the menus for the upcoming week:

I’ve been seeing the spinach, rice and cheese casserole floating around for awhile.  Kelly finally convinced me to try it.  Check out what she has to say here.

For breakfasts this week, we will be enjoying:

  • Pumpkin Muffins
  • French Toast Sticks
  • Pancakes
  • Cold Cereal
  • Omelettes (Ham and Cheese)

Here is the plan for this week:

I generally serve 2-3 veggies and/or fruits with each dinner, but I prefer to throw those together at the last minute. 

Breakfast possibilities include:

  • Baked Oatmeal
  • French Toast Sticks
  • Cinnamon Streusel Bread
  • Whole Wheat Pancakes
  • Apple Muffins

Here is what we will be eating this week for dinner:

  • Grilled Cheeseburgers and oven roasted potatoes
  • Italian Turkey and Spaghetti Squash (recipe here)
  • Lentil Rice Burritos (recipe here)
  • Rotini with Zucchini Tomato Sauce
  • Meatloaf and Mashed Potatoes
  • Acorn Squash and Parmesan Rice
  • Baja Chipotle Marinated Chicken Breasts and Baked Potatoes

I always try to serve a combination of 2-3 fruits and veggies with dinner, but I throw those together while I’m cooking.

Looking at the menu for this week reminds me of why we love our CSA so much.  If you are not familiar with the concept of community supported agriculture, you can learn about it here.  We picked up our last share at the end of October, however this week we will be using zucchini, tomatoes, spaghetti squash, bell peppers, greens, and acorn squash that we were able to preserve during the summer and fall.

Menu planning can really make a difference in your food budget, especially if it keeps you away from the drive-thru.  Here is what we will be eating this week:

Monday-Black Eyed Pea Soup and Cornbread

Tuesday-Black Beans and Rice

Wednesday-Fried Potatoes and Kielbasa

Thursday-Chicken and Pasta

Friday-Chicago Style Pizza

Saturday-Grilled Pork chops

Sunday-Bubble and Squeak

I always serve at least 2-3 fruits or veggies with each meal, but I usually don’t plan these ahead.  The exception to that is soup nights.  I rarely serve anything but bread and maybe a salad along with the soup.


What’s for Dinner? January 23, 2009

As you know, I got a great deal on chicken breasts today.  I also picked up some hamburger buns that were reduced to .59 a package.  So, it looks like barbecued chicken sandwiches for dinner.

I simply placed the chicken breasts in the crockpot, sprinkled them with some seasoning salt, and turned the crockpot on high.  When the chicken is thoroughly cooked, I will take it out of the pot and shred it with two forks.  After mixing it with bottled barbecue sauce, I will return it to the crock and turn the setting to serve.  Dinner doesn’t get much easier than that.


  • Barbecued Chicken Sandwiches ($2.83)
  • Carrot Sticks (.25)
  • Apple Slices (.38 )

Total cost of dinner-$3.46 for a family of 5
